The Holiday Drink – A Recipe

WThis is an easy take on a drink featured on our latest cocktail list. This is a large-volume premix which is bursting with the flavours of the Christmas time, which makes it perfect for hosting a holiday party. Save the extra citrus syrup to use in brunch beverages, desserts, or for more rounds of bikinis.

The Bikini Cocktail

Yields 10 people

Ingredients for the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (makes 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Place all the items inside a pan, heat until it reaches a light boil, agitating until the sugar dissolves. Next, take off the stove and leave to reach room temperature completely. Pour to a sealable bottle, close it and refrigerate it in the fridge, it can be stored for around four weeks.

Preparing the Batch Mix: Combine all the spirits and syrup in a big jug, allow it to infuse for 60 minutes, then strain preferably using cheesecloth, to ensure it's completely strained.

When ready to serve: Add 85ml of the premix into a mixing glass filled with ice, gently stirring lightly for one minute to cool it down. Filter into an cold coupe glass or similar, garnish with the cranberries and finish with a quick spritz of the essential oil above the glass.
